Orne's Beef Empanadas

Ingredients

  • 1.5 lb Ground Beef
  • 2 Cups of Bell peppers - chopped
  • 1 Yellow onion - chopped
  • Salt
  • Pepper
  • Ground Cumin
  • Paprika
  • Oregano
  • 1tbsp Tomato paste
  • 20 empanadas disc
  • 1 Egg - beaten with a tsp of water

Instructions

  1. Preheat oven to 400F.
  2. Spray a medium pan with oil. Combine the onions and bell peppers in the hot pan over medium heat; sauté for 2 minutes. Reduce heat to medium-low and continue cooking, stirring occasionally, until onions and peppers soften. Remove from the pan and reserve.
  3. Spray a medium pan with oil. Cook the ground beef in a pan over medium-high heat, cook until brown, remove the extra fat and season as you go, starting with salt and pepper, cumin, paprika and oregano.
  4. Once the meat is cooked and seasoned, add the tomato paste, combine over medium heat. Once the tomato paste is fully incorporated, add the onions and bell pepper. Stir to combine and remove from the heat. Let the meat fully cool.
  5. Once the meat cooled down, assemble the empanadas, poke the top, spread some of the egg wash and bake at 400F until golden brown for about 40 minutes, check halfway. Enjoy!
