Our family favorite Banana Bread recipe. Created by "Momma Fran". Originally taken from the San Francisco A La Carta Cookbook. Was originally a Pumpkin Walnut Bread recipe.

Linda's Banana Bread

Ingredients

  • 1 ½ cups sugar
  • 1 ⅔ cups all-purpose flour, unsifted
  • ¼ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 eggs, well beaten
  • ½ cup vegetable oil
  • ½ cup water
  • 1 cup cooked mashed bananas (~3 bananas)
  • Butter for pans
  • Flour for pans

Instructions

  1. Preheat oven to 325 degrees.
  2. Mix all the dry ingredients in a large bowl.
  3. Add the eggs, oil, water, bananas and beat until well blended.
  4. Butter and flour your 7-inch loaf pans. Pour the batter into the pans.
  5. Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes in the pans, then remove bread onto a rack.
