Creamy Chicken Gnocchi Bake

Ingredients
- 1 lb Chicken breast
- 5 oz Baby spinach
- 17.5 oz Gnocchi
- 8 oz Mushrooms (sliced)
- 1/2 Onion (diced)
- 200ml Water
- 200ml Chicken Stock
- 1 tsp Garlic powder
- 1 tsp Paprika
- 1/2 tsp mixed herbs
- S&P to taste
- Shredded Mozzarella to top
Instructions
- Preheat the oven at 375°F.
- Add the spinach, chicken, gnocchi, mushroom & onion to the dish.
- In a blender combine the water and chicken stock, add the paprika, garlic, Italian herbs, and mix until combined.
- Add the chicken stock mixture to the dish and then top with mozzarella & cracked black pepper.
- Give it a little stir together, making sure the spinach is fully submerged in the stock mix (so that it wilts) sauce will thicken as it cooks & cools.
- Cook in the oven at 375°F for approximately 35 minutes or until the chicken is cooked.
